WITH Cantharellus


ingredients / 2 persons
  • Tray of Angulas of 100 g
  • 200 g chanterelle mushrooms
  • Extra virgin olive oil
  • 2 cloves of garlic
  • 1 chilli
  • Cebo ham taquitos
  • Salt
PREPARATION /
First of all, we clean the mushrooms with a kitchen towel or a brush and cut the tip of the stem if necessary. In a non-stick frying pan without oil, we put the whole mushrooms with a little salt, to reduce them and eliminate excess water and remove. Peel the garlic cloves, fillet them and in a pan with olive oil and a chilli, brown them for a minute and add the mushrooms. Once the mushrooms are done, we add a few cubes of bait ham and finally we add the elvers directly from the tray, sauté for a minute and at the table! A super easy recipe that is delicious.

with tuna tartare and elvers


ingredients / 2 persons
  • Tray of 100 g Eels
  • 300 g of tuna tartare in tacos
  • Extra virgin olive oil
  • 8 cherry tomatoes
  • Pinions
  • Salt
PREPARAtIoN /
Wash and cut the tomatoes into quarters and reserve, warm the eels in a pan with a little oil for a minute and remove. In a small plate we place the tuna tartar cubes with the cut tomatoes and mix with a pinch of salt, add the pine nuts and finally the eels. We wash everything with a drizzle of extra virgin olive oil ... and enjoy.

WITH MUSHROOM WITH WINE


ingredients / 2 persons
  • Tray of Elvers 250 g
  • 400 g of hydnum repandum mushrooms or cow's tongue
  • Extra virgin olive oil
  • 2 cloves of garlic
  • Chopped parsley
  • 1 glass of white wine
  • Pinions
  • Salt
PREPARATION /
We clean the mushrooms with a cloth or brush and cut them into medium pieces, peel the garlic and cut them into slices, chop the parsley and reserve. In a saucepan with olive oil, brown the garlic and mushrooms until they lose their water, add the salt, the chopped parsley and the pine nuts and cook well. Next we pour the wine, stir carefully and let it reduce the alcohol. Cover and cook over low heat for ten minutes. Finally we put the elvers, stir for a minute and ... ready to taste.
