Angulas del Río Miño, caught alive on new moon nights of each natural fishing season. After their capture, they are kept in our nurseries and selected, cooked and frozen at the optimum moment of their quality and keeping all their properties and freshness intact. Cryogenics with liquid nitrogen is the key process for the deep freezing of our elvers, because a fast, complete and safe freezing is achieved at -50ºC, without damaging their cellular structure and without altering their quality and flavor. The best way to enjoy this wonderful product outside of its natural season.
1. The day before preparing them, move the eel tray from the freezer to the refrigerator.
2. Take the tray of Rio Miño eels out of the fridge half an hour before preparation.
3. Peel the garlic clove and cut it into slices. In a saucepan with a good drizzle of extra virgin olive oil, brown the garlic slices and chilli.
4. Add the elvers before the garlic is completely browned and sauté over high heat for a minute without stopping stirring.
5.Remove them from the heat and serve them in the very hot clay pot and accompany them
with a good white wine, cava or champagne.
