Ingredients: cooked fresh eels, salt and period.
Conservation: Keep in the refrigerator between 0º C and 5º C.

Preparation:

Traditional recipe for Angulas. Ingredients (1 person): 100 g of cooked Rio Miño Angulas, 1 piece of dried chilli, 1 clove of garlic, extra virgin olive oil. Take the tray of Rio Miño eels out of the fridge half an hour before preparation. Peel the garlic clove and cut it into slices. In a saucepan with a good drizzle of extra virgin olive oil, brown the garlic slices and chilli. Add the elvers before the garlic is completely browned and sauté over high heat for a minute while stirring. Take them off the heat and serve them in the hot clay pot.
